Banana Bread!

I nicked some bananas from school earlier this week and stuck them in the fridge, with the intention of eating them one morning, or at least doing something before I felt the need to throw them out. So I searched, and found a recipe for banana bread! I'm not a huge fan of banana nut bread, so I liked this one since it only requires bananas, of course you could always put nuts in I am sure, along with other things.

The pic was slightly coloured wrong when I took the pic (darn over head lights!) so I tried to adjust the colouring.

YUM! Banana Bread
Yields: One loaf
Prep Time: 15 Min
Cook Time: 1 Hr 5 Min

INGREDIENTS:
* 2 cups all-purpose flour
* 1 teaspoon baking soda
* 1/4 teaspoon salt
* 1/2 cup butter
* 3/4 cup brown sugar
* 2 eggs, beaten
* 2 1/3 cups mashed overripe bananas

DIRECTIONS
1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
2. In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream* together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
3. Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

*I had to call Chief Mom to remind me what "cream the butter" meant: basically, soften the butter in the microwave, take it out, mash in the sugar in to it, making it into a paste. Vola! Creamed butter.

Taste: From the end piece so far sampled - DELISH! Will be trying more tomorrow... I will pace myself, I will pace myself... I figured I'd share the goods!
